The Pomace: this grappa is made from pomace produced exclusively from the estate’s vineyards, de-stemmed and fermented late-harvest Sagrantino grapes picked in mid-October. Distillation: distillation takes place in November. The Distillery plant: continuous distillation columns made entirely of copper. Ageing: 4 months. Sold in 700 ml bottles. On the palate it has an intense flavour which is highlighted in the bouquet of white flowers and chamomile. In the mouth it is soft, harmonious and very clean. In the fine aftertaste one can distinguish green wood and liquorice root.
